Kale, or leaf cabbage, belongs to a group of cabbage (Brassica oleracea) cultivars grown for their edible leaves.
In its uncultivated form, it is called wild cabbage, and is native to coastal southern and western Europe.
Its botanical name, oleracea ,means 'vegetable/herbal' in Latin.
Researchers believe it has been cultivated for several thousand years.
A diet rich in cruciferous vegetables (e.g., kale, cabbage, broccoli, cauliflower) is linked to a reduced risk of several human cancers.
How to …
Remove stem from the leaves and tear the leaves into bite size pieces. Put the leaves in a large bowl and discard the stem.
Keep The Leaves Large: They'll shrink once they're dehydrated.

• Place all marinade/topping ingredients into a blender, processing until smooth. Add a little water or oil as needed, for an easier blend.
• Hand-mix the ingredients, massaging gently.
• Transfer to Excalibur dehydrator tray in a single layer.
• Place trays into your Excalibur dehydrator , set to 45C (115F) for around 4-6 hours, or until crispy.
